On Thyme Catering Opens First Restaurant In An Actual Building

When On Thyme opens its first brick-and-mortar restaurant on Castle Street, fans of the company’s food truck and catering operations, as well as new customers, will enjoy a one-of-a-kind dining experience.

Following the success of their food truck, the owners decided to open a conventional location.

According to owner Corey Smith, On Thyme has adopted the trendy “vibe” motif in the restaurant business, and clients can enjoy a lounge-like ambiance replete with music or other acts while eating. To further improve the ambiance, the restaurant will feature the work of local artists, such as the 52-foot mural that adorns the restaurant’s exterior.

Smith vows that the meal will be down-home good no matter how hip the surroundings. His hand-rolled Philly cheesesteak egg rolls with sirloin, roasted peppers, onions, and three different kinds of cheese will be available, as will his Pow Wow Shrimp with spicy Sriracha sauce.

Smith’s signature po’ boy sandwich is made with fried shrimp, lettuce, tomato, and purple cabbage, all topped with his own “thyme sauce”; Castle Street burger is made with two smash burger patties, Colby cheese, caramelized onions, bacon, and Smith’s thyme sauce; and wings are served with 10 different wet sauces and six dry rubs.

Smith also intends to offer a variety of specials, some of which will be themed.

If a reggae band is performing on the restaurant’s deck, Smith may serve Jamaican or Caribbean cuisine.

Dessert selections will be made on an as-needed basis. Smith, on the other hand, assures that Auntie’s Banana Pudding will be a regular option. He made it the traditional way, with meringue on top.

The eatery will provide beer and wine in addition to soft drinks.

On Thyme is a modest restaurant, seating 32 inside and 24 outside, but Smith assures that it will be something exceptional.

“I’m bringing something different to our city,” he said. “On Thyme is more than just a restaurant. It will have entertainment, a mixture of everything, and a bar-type vibe. It’s a nice, wind-down, good eating place.”

When it opens, On Thyme will be located at 918 Castle St. Smith stated that he does not have a specific opening date because he is dealing with supply chain concerns.
